Your kids would love this Spatchcock chicken recipe with flat bread, and cucumber salad. It was inspired by @johntorodecooks who made this on This Morning.

I made this meal a few days ago and added a few tweaks to it.  My entire family loved it.  The kids ate with relish and asked for a second helping each.

This recipe is great for the long summer break when you have a lot of mouths to feed all day. Or even on cold winter nights when you want something hot and tasty. 

This will be going into my family recipe book. You should try making it with the kids using this easy recipe!

Spatchcock Chicken Reipe

Ingredients for  the chicken

      • Spatchcock chicken from any supermarket shelf
      • 8-10 cloves of Garlic
      • drizzle of Olive Oil
      • 2 Lemon (Juiced)
      • I tub of natural yogurt
      • I jar of curry sauce
      • 2 large onions
      • Fresh coriander

Ingredients for the cucumber salad

  • 2 Cucumbers washed and diced
  • 2 Spring onions washed and diced
  • 2 Mixed peppers( optional)
  • Sesame seeds
  • Any salad dressing of your choice

Method

  • Put the chicken in an oven-proof dish, pour the lemon juice over the chicken and marinate overnight if you like.
  • Mix the yogurt and curry sauce and rub generously on the chicken.
  • Put in the oven and cook for 50 mins at 200oc. You can also put this on the barbecue. When cooked, scatter chopped coriander.
  • For the cucumber salad, mix all the ingredients together
  • Serve the spatchcock chicken with cucumber salad and flat bread or nan bread. Enjoy!
  • For dessert, I made a fruit platter with strawberries, blueberries, and kiwi. It was simply delicious!
