I understand that after a full day of work, school runs, or just the general ups and downs of life. The last thing you want is to stand in front of the fridge staring at random ingredients, trying to invent a miracle. I’ve been there, standing in front of the open fridge, eyes closed, and wishing that I could magically conjure up a sumptuous family meal without lifting a finger. Sound familiar?

As a Nigerian mum raising children in the UK, I didn’t just want quick meals. I wanted a mixture of food that feels like home and one that my kids would actually eat. I also wanted a system that meant that I wasn’t making daily decisions about what to cook every day.

Our weekly dinners now include meals such as:

We don’t have to choose between Nigerian food and food from other continents. We simply mix  and match. 

3. Plan For Real Life

Involve the kids and let them help you choose one meal a week. 

Weekdays should be easy, so make lots of meals you can reheat. Leftovers are handy for busy days. That means:
• One-pot meals
• Tray bakes
• Rice dishes
• Meals that reheat well

Weekends can be your “proper cooking” days if you enjoy it. This small mindset shift will change everything.
